
Hungarian Homemade Smoked Sausage, known as Házi Kolbász, is a traditional favorite celebrated for its rich pork flavor, fragrant garlic, and generous amount of Hungarian paprika. Traditionally prepared during the colder months, this rustic sausage is an important part of Hungarian food culture and is often enjoyed with fresh bread, pickles, mustard, and other classic sides.
Making sausage at home takes some preparation, but the ingredients themselves are wonderfully simple. The signature Hungarian flavor comes from quality pork, garlic, paprika, salt, and black pepper.
Ingredients
- 2 kg pork shoulder or pork butt, well chilled
- 400–500 g pork fat, well chilled
- 40–45 g salt
- 35–45 g sweet Hungarian paprika
- 10–15 g hot Hungarian paprika, optional
- 5–6 cloves garlic, finely crushed
- 1 teaspoon freshly ground black pepper
- 100–150 ml very cold water
- Natural hog casings, prepared according to package directions
For smoking, use a commercially prepared curing salt intended specifically for sausage, following the manufacturer’s exact dosage and instructions. Do not substitute ordinary table salt or estimate curing-salt quantities.
